Creamy Tomato Basil Chicken

This Creamy Tomato Basil Chicken recipe is safe for Phase 2 of the HCG Diet and counts as 1 protein serving and 1 vegetable serving while on the low-calorie phase of the HCG Diet.
You may notice that the 100 gram serving of protein in this dish is comprised of 80 grams of chicken breast and 20 grams of cottage cheese. This is not an issue!
Per Dr. Simeons, there's no mixing of vegetables on the HCG Diet, but what about fruits and proteins? We interpret the manuscript to allow more than one type of fruit or protein to make up the stated serving per meal. According to our research, participants are allowed a protein serving of 100 grams of allowable proteins, which we think could be 50 grams of lean steak and 50 grams of shrimp if someone chose. - 8 oz canned petite diced tomatoes
- 80 g boneless skinless cubed chicken breast
- 20 g cut up cottage cheese, non-fat or 1% low-fat
- 1/3 tsp minced garlic
- 1/3 tsp dried basil
- 1/4 tsp dried oregano
- 1/8 tsp black pepper
- Dash of salt
- 2 drops clear stevia (optional)
- Fresh basil optional

Add tomatoes, garlic, basil, oregano, pepper and stevia into a small saucepan.

Mash the cottage cheese with a fork, since big curds don’t look super appetizing.

Add to tomatoes and stir to combine ingredients.

Cook over medium heat.

Cube raw chicken breast, then add to heated tomato mixture.

Bring it to a gentle boil, then turndown the heat to low and simmer for 5 minutes.

Stir in fresh basil and serve!
