Pancakes and Eggs (Phase 2)

This recipe for pancakes and eggs is perfect for Phase 2 of the HCG Diet and counts as 1 serving of protein and 1/2 serving of fruit. Who says you can't have breakfast food for lunch or dinner!

Pancakes and Eggs (Phase 2)

Ingredients
  • 1 whole egg
  • 3 egg whites
  • 1/4 cup unsweetened applesauce (=1/2 fruit)
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 drops Vanilla Crème or Clear Stevia
Instructions
  1. Combine 1 whole egg, 1 egg white, applesauce, spices and stevia into a mixing bowl.

  2. (Since the recipe calls for 1/4 cup of applesauce but a fruit serving is equal to 1/2 cup of applesauce, I slice a half apple to eat as the dessert portion of my meal.)

  3. Mix well, batter will be thin.

  4. (This leaves 2 unused egg whites to make scrambled eggs.)

  5. Heat a non-stick skillet.

  6. Pour one-fourth of the mixture into the skillet. Cook about 3 minutes per side or until brown and cooked through.

  7. Repeat until the batter is used.

  8. After pancakes are made, put the egg whites in the non-stick skillet.

  9. Sprinkle on salt and pepper.

  10. Stir with spatula until egg whites are done.

  11. Place pancakes and eggs on a plate and enjoy!
