Chicken and Cucumber Stir-Fry (Phase 2)

This HCG Diet Chicken and Cucumber Stir-fry recipe is safe for Phase 2 (VLCD Phase) of the diet and counts as 1 meat serving and 1 vegetable serving. It's possible you've never prepared a dish that includes cooked cucumber, but it is surprisingly tasty. Give it a try!

- 100 grams raw chicken breast
- 1 tsp Bragg Liquid Aminos*
- 2 tsp Simple Girl Hot Sauce
- 2 tsp Bragg Liquid Aminos*
- 5 drops clear stevia
- 1 tsp water
- 1 tsp minced garlic
- 1½ tsp water
- ½ English cucumber
- 1½ tbsp water

Cut chicken into 3/4 in. cubes and toss in 1 tsp Bragg Aminos.

Cut cucumber in half horizontally.

Slice into ¼ in. thick pieces.

Combine hot sauce, 2 tsp Bragg Aminos, and clear stevia and set aside.

Add chicken and 1 tsp water (to prevent burning) to skillet and brown chicken.

Remove chicken and set aside.

Add 1½ tsp water to skillet and, when heated, add the minced garlic.

Sauté the garlic until browned.

Add cucumber, 1 tbsp water and the sauce mixture and stir.

Cook until cucumber is to your liking, adding a little more water if necessary.

Stir in chicken, then serve in a bowl, making sure you get all the juice!
*We have found that Bragg Liquid Aminos seem to be okay to use while on Phase 2 (the VLCD phase) of the HCG Diet. Calories, carbs, and sugar are all zero. When using Bragg Liquid Aminos, write it down in your daily weight/diet food log you’re using to track your progress. If it has a negative effect on your weight loss, discontinue use.
