Easy Cucumber and Beef Stir Fry

This HCG Diet cucumber and beef stir fry recipe is safe for Phase 2 (VLCD Phase) of the diet and counts as 1 meat serving and 1 vegetable serving. You may not think of cucumbers as a vegetable you cook, but try it! You'll like it!

- 100 grams extra lean ground beef (90% - 93% fat free)
- 1/2 English cucumber, sliced thin
- 1/8 tsp sea salt
- 1/8 tsp onion powder
- 1/4 tsp minced garlic
- 1-2 tsp water

Brown ground beef in a small non-stick skillet, breaking it into small pieces.

After cooking, remove from pan and set aside.

Slice cucumber into 1/8 inch slices.

Toss cucumber slices with sea salt, then let rest for 5 minutes.

Add minced garlic and water (just enough to keep anything from sticking and burning) into the skillet.

Turn heat to medium-low.

After the garlic and water are hot, add cucumber and stir for about 5 minutes.

Add ground beef and onion powder and stir until all ingredients are well combined.

Cook for about 5 more minutes.

Serve immediately.
