Pancakes and Eggs (Phase 2)
Diet Phase: Low Calorie Phase Course: Main Course
This recipe for pancakes and eggs is perfect for Phase 2 of the HCG Diet and counts as 1 serving of protein and 1/2 serving of fruit. Who says you can't have breakfast food for lunch or dinner!

- 1 whole egg
 - 3 egg whites
 - 1/4 cup unsweetened applesauce (=1/2 fruit)
 - 1/4 tsp cinnamon
 - 1/4 tsp nutmeg
 - 3 drops Vanilla Crème or Clear Stevia

Combine 1 whole egg, 1 egg white, applesauce, spices and stevia into a mixing bowl.

(Since the recipe calls for 1/4 cup of applesauce but a fruit serving is equal to 1/2 cup of applesauce, I slice a half apple to eat as the dessert portion of my meal.)

Mix well, batter will be thin.
 - 
										
(This leaves 2 unused egg whites to make scrambled eggs.)
 - 
										
Heat a non-stick skillet.
 - 
										
Pour one-fourth of the mixture into the skillet. Cook about 3 minutes per side or until brown and cooked through.
 - 
										
Repeat until the batter is used.
 - 
										
After pancakes are made, put the egg whites in the non-stick skillet.
 - 
										
Sprinkle on salt and pepper.
 - 
										
Stir with spatula until egg whites are done.
 - 
										
Place pancakes and eggs on a plate and enjoy!
